        Hi Jocelyn

        It is a very sketchy recipe but I usually have success with it. I like it because there is no waste! When making merengues the egg yolks hang around until they go 'off' unless you have something specific to do with them. With this recipe, everything is used.

        This is how it was given to me.

        Make a 4 egg merengue. (Can't remember, but I think it is 4 eggs, 8oz sugar. Please check).

        Bake for 1 1/2 hours. Sorry no temperature. You must look it up!

        I think I put the merengue mix on 2 - 8 inch round baking papers. (Cake tin liner).

        For the filling:

        4 oz caster sugar
        4 egg yolks ( you know, left over from the merengue)
        3 tablespoons lemon juice and rind grated.

        Cook in microwave, slowly, stirring every 10-15 seconds until the mixture thickens. (It is like lemon curd). Don't do it too quickly or too high or it will curdle!

        When cold:

        Beat 1/2 pint double cream and add it to the cooled lemon curd mixture.

        Fill the merengue.

        It is delicious. It freezes well.

        You can make the merengue and lemon mixture and keep in the frig for a day or two until you wish to add your cream.

          Hello all!

          We had birthday party's today! My son turned two on the 23rd and my daughter turned six today on the 25th.So my twelve year old made the cakes. Here is my son blowing out his candles. It was the first time he could blow them out all by himself! next picture is Kimberly blowing out her candles . Ummmmmm Chhocolate!! :b

            Kids always make for an interesting shot.
            It's the innocence given in the picture that makes it all.

            btw.. love the 'soft tones' of the shot of Kimberly.

              Here is a picture taken whilst on my cruise aboard the Legend of The Seas around the Med. They had a midnight chocfest where the cooks would show off their skills with food. A fascinating and glutenous evening. Shaun
