Due to a minor error involving old and new measurements and fan ovens our first Christmas cake was severely burned. A bit of internet searching came up with a superb rescue recipe
200 g dark catering chocolate
100g double cream
Make ganache
While still warm blend in 400-800g of less burned cake and some rum
Set on small flan tin on digestive biscuit base
Top with crystallised ginger
Chill/freeze
Eat in small quantities with good ice cream topping
It's better than the original cake. May not be on Weightwatchers approved list though.
