I still make it as well when I have the leftovers for it.
We use leftovers too but I have to admit we sometimes cook more veg than we need so we can make bubble and squeak 'blobs' for the freezer. We store the 'blobs' into freezer boxes or bags so we always have some of it available if we want to shove some into an omelette or fry some up with bacon, eggs and mushrooms.
